The recipe of marinated egg and three textures of white Truffle by Piergiorgio Siviero

The egg with White Truffle is one of the simplest and reproduced recipes, above all to enhance the rarest and precious truffle, the White Truffle from Alba.

Piergiorgio Siviero, chef and owner of the Restaurant Lazzaro 1915 in Pontelongo nearby Padua in Italy, is one of the 3 winners of the photographic contest organized by Tartuflanghe in collaboration with Italia Squisita Magazine and the chef association JRE Italia. In this video he introduces us his revisited version of this dish in different steps: marinating the egg yolk, the use of different “forms” of the Truffle. A dish rich in textures and new pairings.
