Cook the tagliolini in 2 litres of salted water for about 3 minutes, drain the pasta and toss it in a saucepan together with some butter. Tagliolini and tagliatelle eggpasta with truffle produced through an authentic handmade process: copper drawing, the completely hand-made shape, which gives an extraordinary texture to the pasta, the sophisticated and well balanced taste and the great quantity of eggs, which enhances the flavour of the truffle in this home-made pasta.
